Tex Mex Smash Burger Tacos

Ingredients
- 400 g Premium beef mince
- 2 Tbsp Barker’s Smoky Onion Jalapeño Relish
- 8 Farrah’s Taco Tortillas
- 2 tsp Cooking oil
- 8 slices Smoked cheddar
To serve
- Charred corn kernels
- Red onion, finely diced
- Jalapeños, sliced
- to serve Barker’s Smoky Onion Jalapeño Relish
- Fresh coriander
Method
- Mix mince with Barker’s Smoky Onion Jalapeño Relish. Divide into 8 portions. Press a thin layer of beef onto each of the tortillas, pushing it right to the edges. Season well.
- Heat a frying pan or barbecue plate over high heat. Add a little oil and then one of the tortillas, beef-side down. Press down with a burger press or large spatula. Cook for 1 minute, then flip, top with a cheese slice and cook for 30 seconds. Remove from pan and repeat with remaining tacos.
- Top with corn, red onion, and jalapeños. Squeeze Barker’s Smoky Onion Jalapeño Relish on top and garnish with coriander.
Notes
- If you have a gas stove, you can pre-char your tortillas for extra smoky flavour.
