Heirloom Tomato and Bocconcini Salad

A mix of brightly coloured tomatoes, combined with bocconcini or mozzarella and our Herb & Caper Vinaigarette makes for an easy and rewarding summer salad.

Method

  1. Cut the tomatoes into slices and arrange on a serving dish. Slice the bocconcini and arrange on top of the tomatoes. Season with salt and pepper.
  2. Drizzle the Barker’s Herb & Caper Vinaigrette over the tomatoes and bocconcini.
  3. Scatter over the basil and capers and serve.
