Thai Red Chicken Curry

Ingredients
- 600 g Boneless, skinless chicken thighs (diced and seasoned)
- 1 Onion, thinly sliced
- 1 Capsicum, thinly sliced
- Green beans, halved
- 500 g Barker's Thai Red Curry Meal Sauce
- Jasmine rice, to serve
- Coriander or Thai basil, to garnish
Method
- Brown chicken in a wok with a little oil.
- Add onion, capsicum and beans. Stir fry for 2 minutes.
- Add meal sauce and simmer for 10 minutes, until chicken is cooked. Season to taste.
- Serve on rice. Garnish with herbs.
