BBQ Pork Belly Burgers

We're not telling porkies! These burgers are juicy, indulgent, and full of flavour.

Ingredients

  • 550 g Boneless pork belly strips
  • 1/2 cup + extra to baste and serve Barker’s Original BBQ Sauce
  • 4 Seeded brioche burger bun
  • 2 cups Creamy coleslaw
  • 4 slices Swiss Cheese
  • 1 Small red onion, thinly sliced
  • 4 Tbsp Mayonnaise
  • To serve Fries

Method

  1. Preheat oven to 160ºC bake / 140ºC fan bake.
  2. Place pork in a large resealable bag and season with salt and pepper. Add Barker's Original Barbecue Sauce, seal bag and toss to coat. Transfer to a roasting dish, cover with foil and bake for 1 1/2 - 2 hours, until tender. If not using immediately, allow to cool and refrigerate until required.
  3. Pan fry or barbecue pork belly strips until lightly caramelised, basting with more Barbecue Sauce during cooking.
  4. Halve burger buns and lightly toast. Spread the base of each bun with barbecue sauce, then top with slaw, pork belly strips, cheese, red onion and lettuce.
  5. Spread the top half of each burger bun with mayonnaise and sandwich the burgers together. Serve with fries.

Tips

  1. Steps 1 and 2 can be completed up to 48 hours in advance.
