Take your meal to Morocco - try a Vegetarian Tagine, an Apricot Chicken Bake, or Apricot Lamb with pearl couscous.

Dice 600g kumara, eggplant, 1 courgette, 1 capsicum and garlic, add to casserole dish. Pour over Apricot Chickpea Sauce. Bake for 30-40 mins. Serve on couscous with olives and toasted almonds.
