Nacho Bowls

This flavourful and fun meal is sure to please the whole family, on the dinner table in just 30 minutes.

Ingredients
- 2 tsp Olive oil
- 500 g Prime beef mince
- 1 Beef stock cube
- 500 g Barker's Tomato Nachos Meal Sauce
- 420 g Chilli Beans
To serve
- 1/4 Red cabbage, shredded
- 200 g Cherry tomatoes, quartered
- 1/2 can Corn kernels, well drained
- 1/2 Small red onion, diced
- 2 handfuls Fresh coriander, roughly chopped
- Juice of 1/2 lime
- 1 Tbsp Olive oil
- 200 g Sour cream
- 4 tsp Barker's Really Useful Chipotle Sauce
- 250 g Corn chips
- 1 cup Grated cheese
- 1 Avocado, diced
- Lime wedges
Method
- Heat oil in a large saucepan on medium-high. Add mince and cook, breaking up with a wooden spoon, until browned all over.
- Crumble in stock cube and cook for 1 minute. Stir in Barker’s Tomato Nachos Meal Sauce and chilli beans. Simmer for 5-10 minutes, stirring occasionally. Season with salt and pepper to taste.
- While nacho mixture is simmering, prepare serving ingredients. Place cabbage, tomatoes, corn, onion and coriander in a large bowl. Drizzle with lime juice and olive oil and season with salt and pepper. Toss to combine.
- Place sour cream and smaller quantity of Barker’s Chipotle Sauce in a small bowl. Stir until well combined. Taste and add more chipotle sauce if desired.
- Layer up nacho bowls with corn chips, mince mixture, cheese and cabbage salsa. Top with avocado and dollop with chipotle sour cream. Serve with lime wedges.
