Gingerbread Caramel French Toast

Easter weekend brunch is sorted with our Gingerbread Caramel French Toast. Sweet, spiced, and absolutely irresistible.
Ingredients
- 3 Eggs
- 2 Tbsp Barker’s Gingerbread Caramel Spread
- 3/4 cup Milk
- 2 Tbsp Butter
- 8 thick slices Bread (brioche, fruit toast and sourdough all work well)
To serve
- Barker’s Gingerbread Caramel Spread
- Vanilla bean Greek yoghurt or mascarpone
- Blueberries and/or sliced banana
- Icing sugar, to dust
Method
- Whisk eggs and Barker’s Gingerbread Caramel Spread together in a shallow dish until well combined. Whisk in milk.
- Heat half the butter in a large frying pan over medium heat until melted and bubbling.
- Dunk a slice of bread in the egg mixture, turning to coat both sides. Cook for 2-3 minutes each side, until golden brown. Repeat with remaining bread, adding more butter to pan as required.
- Spread French Toast with Barker’s Gingerbread Caramel Spread and dollop with yoghurt or mascarpone. Top with blueberries and/or banana, and dust with icing sugar. Serve immediately.
Notes
- Try hot cross buns (halved) or crumpets as an alternative to sliced bread.
