Fiery Fish Tacos

Ingredients
- 400 g Pre-crumbed or battered fish pieces
- 8 Small flour or corn tortillas
- 1/2 cup Sour cream
- 1 Petite cos lettuce, shredded
- 420 g Whole corn kernels, well drained
- 1/2 cup Pickled red onion
- 5 Tbsp Barker’s Pineapple & Habanero Relish
- 1 Large handful Fresh coriander
Method
- Cook fish according to instructions on packet.
- Carefully char tortillas over a gas stove or in a really hot frying pan.
- Spread tortillas with sour cream and top with lettuce, corn and pickled red onion. Add fish and dollop relish on top. Garnish with coriander, if desired.
Notes
- You can use fresh corn or frozen corn kernels (defrosted), if preferred.
