Smashed Meringue Berry Parfait

INGREDIENTS

METHOD

  1. Beat the cream with the icing sugar and vanilla essence until firm.
  2. Fold through the mascarpone.
  3. Layer the smashed meringues, cream mix and dollops of yoghurt in the serving glasses.
  4. Splash over 3 Tbsp of berry fruit syrup.
  5. Repeat the layers and syrup splash, finishing with smashed meringues.
  6. Serve immediately.
