Salmon & Lemon Mayo Blinis
PRINT RECIPE
- Pre-made blinis can be purchased in the bakery section of your local supermarket.
- To make your own blinis, use a pikelet recipe without the sugar.
- Delicious on crackers too!
INGREDIENTS
- 1/2 cup Barker's NZ Squeezed Lemon Curd
- 1 cup whole egg mayonnaise
- 12 pre-made blinis (or gluten free blinis)
- 12 slices smoked salmon
- 1 lemon, thinly sliced and halved
- 1/4 cup parsley
METHOD
- Mix together 1 part NZ Squeezed Lemon Curd to 2 parts mayonnaise.
- Spread lemon mayonnaise on blinis and top with salmon slices.
- Garnish with slices of lemon and parsley.
