Salmon & Lemon Mayo Blinis

  • Pre-made blinis can be purchased in the bakery section of your local supermarket.
  • To make your own blinis, use a pikelet recipe without the sugar.
  • Delicious on crackers too!

INGREDIENTS

  • 1/2 cup Barker's NZ Squeezed Lemon Curd
  • 1 cup whole egg mayonnaise
  • 12 pre-made blinis (or gluten free blinis)
  • 12 slices smoked salmon
  • 1 lemon, thinly sliced and halved
  • 1/4 cup parsley

METHOD

  1. Mix together 1 part NZ Squeezed Lemon Curd to 2 parts mayonnaise.
  2. Spread lemon mayonnaise on blinis and top with salmon slices.
  3. Garnish with slices of lemon and parsley.
