Wrapped with Relish
Relishes and chutneys go deliciously with almost everything, and we’re particularly wrapped with the wrap combo too!
Our friends at Farrah’s sent us their amazing array of wraps and we took it to task to think of easy ways to enjoy both wrap and relish together.
Here are our tasty creations:
Super-easy dip and crisps
Here we simply mixed equal dollops of Barker’s Spiced Eggplant Chutney with sour cream and swirled them together for our dip. And for crisps, simply cut Farrah’s plain wraps into nibble sized bites and bake in the oven for just a few minutes!
Ploughman’s Pizza Snacks
Slather the wrap with Barker’s Ploughmans Chutney, slice into slithers, sprinkle finely grated tasty cheese and bake for just a few minutes. The result? Delicious finger food — whether served warm or cold, just divine.
Is it a frittata or a quiche? Who knows, but it tastes great! This usage allows for a thin wrap crust – enough to contain the filling and enable easy slicing and serving too.
Simply slather a single wrap with your favourite Barker’s chutney, lay the wrap inside your baking dish and fill with your favourite pre-roasted vegetables. Beat together 4 eggs and 1/2 cup of milk/cream together (more liquid if needed), a dash of salt and pepper, and pour over prepared dish. Bake at 180°C until cooked through. Serve with a dollop of Barker’s relish on the side. Perfect.
Baked Salmon Crunch
This is so simple you’ll pinch yourself for not doing it sooner. Slather the top of your salmon fillets with Barker’s relish (we recommend something with a bit of bite, such as Barker’s Capsicum & Apricot Chutney). Top with wrap-crumbs (made by tearing up a single wrap into smaller strips and and putting through the food processor until crumbed, just like you would when making fresh bread crumbs). Sprinkle the wrap-crumb on top of the relish and bake in the oven.
The chutney caramelises and the crumb crisps – delish. We used Farrah’s Garden Spinach which added to the colour!
The ‘Everything’ Baked Burrito!
This could work with just about any combination of fillings. We made our own Mexican inspired burrito with sauteed onion, chilli beans, refried beans, cooked shredded chicken, chilli (if you like the heat), and lashings of Barker’s Really Useful Chipotle Sauce. Saute together in a pan adding a little water if required so it’s doesn’t thicken too much and burn. Place spoonfuls of warm mix onto wraps, roll and place side-by-side in a baking dish. Sprinkle with grated cheese and bake for 20 minutes at 180°C. Garnish with fresh coriander.
