CITRUS HAM GLAZE: In a saucepan, warm together ½ cup Barker’s Lemon & Lime marmalade with 2 tablespoons each of Barker’s Lemon, Honey & Ginger fruit syrup and prepared french mustard. Decorate ham with cloves and citrus fruit slices and brush over glaze.
NUTTY LIME GLAZE:
To make the ham crust crush 125gms/1 cup of roasted cashews (or roasted blanched almonds or walnuts). In a saucepan melt 1/2 cup of Barker's Lemon & Lime Marmalade; add 2 Tbsps each of Dijon mustard and Barker's Lemon, Honey and Ginger fruit syrup and the grated zest of 1 lime. Stir in the crushed nuts and 1 beaten egg. Spoon and press the glaze over the ham.
