1/2 Tbsp coriander seeds 45 ml Lighthouse Gin 15 ml dry vermouth 15 ml Barker’s Lemon, Honey & Ginger Fruit Syrup Ginger beer Cinnamon sticks
Toast the coriander seeds over low heat until just browned. Mix together the gin, vermouth and syrup. Add the toasted coriander seeds and infuse for 5 minutes. Strain over a hi-ball glass of crushed ice. Top with ginger beer. Garnish and stir with a cinnamon stick.
Tips:
- If you don't have coriander seeds, simply crush 4 peppercorns and 4 whole cloves into the syrup mix and infuse for 5 minutes.
- Replace the spices with crushed basil or mint leaves. Crush 4 leaves into the syrup mix and infuse for 5 minutes.
- Smash or muddle the ginger with the vodka and syrup.
- Pour into an ice filled hi-ball glass.
- Top with the ginger ale or ginger beer.
- Garnish with lemon or ginger slices.
- Replace the ginger ale or ginger beer with soda water.
