Salmon & Lemon Mayo Blinis
1/2 cup Barker’s of Geraldine New Zealand Lemon Curd 1 cup whole egg mayonnaise 12 pre-made blinis (or make your own mini pikelets) 12 slices smoked salmon 1 lemon, thinly sliced and halved 1/4 cup parsley
Mix together 1 part Barker’s lemon curd to 2 parts mayonnaise. Spread lemon mayonnaise on blinis and top with salmon slices. Garnish with slices of lemon and parsley.
Pre-made blinis can be purchased in the bakery section of your local supermarket To make blinis, use a pikelet recipe without the sugar Delicious on crackers too!
For a gluten free version, make or buy your pikelets using gluten free flour (or simply replace standard flour with this simple alternative: 2 parts rice flour to 1 part tapioca flour). Make or buy a gluten free mayonnaise.
